A few friends have asked me for my pumpkin soup recipe, so here it is!
1 whole pumpkin peeled
2-3 Orange kumara, peeled
Red Thai curry paste
3-4 cloves garlic, crushed
1-2 white onions, finely chopped
1 can coconut cream/milk
4-5 dried Kaffir Lime leaves
A bit of cayenne pepper
handful of fresh coriander, chopped
salt to taste
water (to dilute pumpkin puree if needed)

Wow... time and life have just flown by!
It was almost 3 months ago that I wrote to you in anticipation of our little bundle of joy. After going two weeks past my due date, and spending 35+ wonderful hours in delightful, induced labor (ha!), our little boy came to join us.

I had my weekly check up at the midwife this morning and found some interesting news: bub wasn't due until TODAY! June 15th! Here's why the confusion...
My original EDD (estimated date of delivery) was the 15th of June. Then, when I had an ultrasound later in pregnancy, the reading gave a new due date of the 12th of June, according to bub's size. I just assumed that that was my new and true EDD, but I didn't know that Leigh (my midwife) was still going off of the original o...

I just came on here to tell you that we have had a great weekend.
What did we do?
Well, Saturday, we slept in, and hung around the house... relaxed. Jordan went to the gym around 1, and I finished doing a bit of laundry. Around 2:30 I was on my way for a walk, and Jordan passed by me on the road, so I got in the car, came back to the house, and we went for a walk together. We just walked down to the Bethlehem shops...

Okay... I admit, what a cheeser of a post title, I know. But! I needed some way to express my excitement about the fact that Jordan, me, and our son will be visiting in the US this holiday season! We are so excited about this!
